Sweet Potato and Quinoa Soup

I love the fall and winter months but as the weather gets colder, the leaves have changed colors and finally fallen to the ground and the snow starts to fall I find myself needing more substance from my favorite soup. Then I discovered this recipe, it not only satisfied my craving for soup, but the hearty addition of quinoa gave me a boost of protein and kept me feeling full for longer.

Instructions
Soup
  1. Heat coconut oil on med-high heat in saucepan.
  2. Add garlic and onion, sauté, stirring often for 5 minutes.
  3. Turn the heat down to med-low, cover and stir every 2 min.
  4. After 10 min add vegetable broth, bring to a boil. Add sweet potatoes and cook for 15 minutes, or until tender.
  5. Turn off heat and let sit until cool enough to handle the pot, blend the ingredients until completely smooth. Return the mixture to the pot, stir in tamari or soy sauce and add salt/pepper to taste
Quinoa
  1. 1/2 cup dry quinoa 1 tsp coconut oil 1 cup and a splash water dash of salt
  2. Rinse quinoa before cooking. You will want to use a mesh strainer for this.
  3. Heat the coconut oil in a small saucepan on med-high. Add quinoa and toast for 2-3 minutes, stirring throughout.
  4. Add water, bring to a boil. Cover and let simmer for 15 minutes.
  5. Turn off heat and let the pot sit for 5 minutes to ‘fluff’ before serving. Mix it all together and top it with some fresh grated parmesan cheese. Delish!
