  1. Once the roasted beet has been cooled (do this while it's hot) and peeled, you will quarter it and throw it in the blender. Blend it until only small bits are left.
  2. Add the remaining ingredients except the olive oil. Blend until smooth
  3. As the blender is mixing, slowly drizzle the olive oil in. You can adjust the seasoning to taste. If it's too think just add a bit of water.
Recipe Notes

Keeps in the fridge for about a week in an airtight container.

How to roast your beets

I cannot take full credit for this, while this is one of my original recipes I had completely forgotten about it until last year. I've been giving it to clients and never actually put it up on my site (bad I know!) Each time I went to post it I had forgotten to take a photo, it doesn't last very long in my house so getting a photo before it is gone is quite the challenge.
