  1. In a small bowl whisk together the yogurt, mayonnaise, lemon juice, vinegar and honey until smooth
  2. In a food processor, grate the carrots then the apple. Transfer to a large bowl and toss with the dressing
  3. Add the mint and salt to taste last. You can leave it all in the fridge to let the flavours meld together for a better tasting slaw. It keeps for three days in the fridge in an air tight container.
