So what exactly is a tiger nut anyway? Well for one thing it isn’t even a nut, it’s a tuber,which are actually the root from the chufa sedge plant. Popular for their nutty flavour (likened to a freshly roasted chestnut) this is beverage popular in West Africa and Spain. It is rich in minerals such as calcium, magnesium, potassium,phosphorus and vitamins C & E as well as monounsaturated fat (that’s a healthy fat) like oleic acid which is associated with high HDL (the good cholesterol), they are also a great source of fiber. It’s a great substitute for Almond milk which is high in the inflammatory Omega 6 that can cause issues over time.
